Fig and goat’s cheese tart recipe

The Good Grocer IGA shares an irresistible tart recipe, made with fresh, juicy figs and soft goat’s cheese.

This colourful tart is easy to make and full of delicious flavour.

Ingredients

  • 1 block (375 g) puff pastry
  • 1 egg, beaten
  • ½ cup good-quality fig jam
  • 120 g soft goat's cheese
  • 1 teaspoon chopped rosemary
  • 3-4 ripe figs, cut into wedges
  • 1 tablespoon honey

Method

  1. Preheat the oven to 180°C. Line a baking sheet with baking paper.
  2. Roll out the pastry to an 18cm x 30cm rectangle. Brush the top with egg and prick with a fork. Place on a baking sheet and bake for 10 minutes. Remove and lay another tray on top and return to the oven for 10 minutes. Remove and allow to cool slightly.
  3. Preheat the grill to medium-high.
  4. Spread jam over pastry base, crumble cheese over, sprinkle with rosemary and season. Lay figs on top.
  5. Place under the grill for 2-3 minutes until the cheese is lightly golden. Drizzle with honey. Serve with a green salad.

Tips: When baking the puff pastry be sure to rotate the sheet so it gets an even golden-brown colour. If unable to source fig jam you can substitute with prune, date, nectarine, apricot, blueberry, or cherry jam.

  • Choose puff pastry made from vegetable oil, or try a wholemeal flatbread as a base instead to reduce the saturated fat and sodium content. Just place into the oven (at around 180°C) with a little extra-virgin olive oil until slightly toasted and crisp.
  • Reduce added sugar by reducing the amount of fig jam and honey (to taste)
  • Control your portions – savour a small slice with a large serve of a leafy green salad.
