Christmas Quookie recipe: Spiced cranberry & oat cookies with white chocolate drizzle

This is festive fuel for the whole family, and the perfect sweet treat for Santa too! Sweetened with banana, honey and jolly cranberries, the little ones can help get a fresh batch of quookies ready for Santa on Christmas Eve – to be served with a glass of milk of course. Mrs Clause sends her regards; she’s been trying to get Santa to cut back on sugar for years!
Spiced cranberry & oat cookie recipe

Ingredients
- Honey - 3 tablespoon(s), 1/4 cup
- Butter (no added salt) - 40g
- Banana - 3 medium, ripe mashed
- Egg yolk (raw) - 2
- Rolled oats (raw) - 3 cups
- Dried cranberries - 2 tablespoon(s)
- Fruit, nut & seed trail mix - 135g, 3/4 cup
- Mixed spice - 1 teaspoon(s), or cinnamon and ground ginger
Method
- Preheat oven to 160°C fan forced.
- Grease a baking tray. Line base with baking paper.
- Combine the honey and butter in a microwave-safe bowl. Microwave for 1 minute on High/100% until butter has melted. Stir until well combined. Cool for 5 minutes. Add the banana and eggs yolks, mix well.
- Add the oats, cranberries, trail mix and mixed spice (if using). Mix until well combined.
- Scoop tablespoon mounds onto a lined tray, flatten slightly, and bake 12–15 min. Set aside to cool completely in the tin.
TIP: Quookies will keep in an airtight container in the fridge for 1 week.
